These hot summer days, need the yummiest chilled treats to satisfy the heart. And I can surely say that there is nothing which can replace or act substitute to a creamy sweet Kulfi. Well, when staying indoors during summer its gets quite upsetting that you cannot go and out to enjoy your favorite Kulfi. But what you make the delicious Malai Kulfi at home with minimal efforts.
Down is the recipe for mouthwatering chilled Malai Kulfi with only two main ingredients.
1.25 liters Full Fat Milk
1/3 cup Powdered Sugar
Heat the milk until it comes to boil, and then keep it boiling on a medium flame while stirring in between.
Then add powdered sugar, cardamom powder, and chopped pistachios.
The mix is well while it is still cooking on a medium flame.
Keep stirring and cooking until it reaches 1/3 rd of its original quantity and it gets to a thick consistency like that of rabdi.
Once it is nice and thick in consistency, turn off the flame and allow it to cool.
Then keep the mixture in the fridge for 2 hours. And keep the empty kulfi molds in the freezer.
Then, take out the mixture from the fridge and whisk it well and keep it in the freezer for an hour.
Then, take the mixture out from the freezer and whisk it again and put in back in the freezer. Repeat this 2-3 times.
After doing the whisking process for 2 hours, take the mixture out, whisk it one last time , and pour it in the Kulfi molds.
Now, keep the kulfi molds in the freezer overnight or at least 8 hours until the Kulfis are perfectly set.
Then take the Kulfis out of the molds and its ready to serve.
